Every year we make a small but thoughtful amount of our most technical style of wine - Méthode Champenoise sparkling. This category, whose critical steps leave zero room for error, both excites and terrifies us.

During the production of sparkling wine there is a massive checklist of things that must go perfectly right in order for quality bubbles to come to life: the fruit must be picked early, pressed gently, the wine stirred weekly without introducing oxygen, kept cold but not too cold, and then refermented with the most precise math, rested for years on end, and then brought back to life when it’s time for its release.

Every year I fear I’ve missed a step or made a mistake and yet, at each reveal, I’m so pleased that the bubbles come out with such life and character. That rejoiceful feeling never fades and after all that work and years of resting, POP! The corks come flying off and like a boozy Pavlovian pup, I’m ready to do it all over again.

This wine saw 8 months in neutral barrel and 36 months in tirage. 6g/L dosage at bottling.
